This parcel of 3.9 hectares was planted 100% of monastrell grape in 1978. At 570 meters of altitude, it’s characterized by its clay-limestone soils and a strictly non-irrigated goblet vines with tillage work.
Vintage
The latest parcel we harvest manually and selecting the bunches. Average yield of 2.500 kg/ha.
TASTING NOTES
It shows an intense cherry red color, with maroon edges. On the nose you find ripen black fruit, smoke, sweet spices and aromatic herbs. On the palate delicious, deep, with lovely round hint of chocolate and a bright acidity. A wine with goo structure with a sweet sensation of ripe tannin.
Elaboration
100% destemmed, we chill down the grapes. Cold maceration in stainless steel tank during 10-12 days. Fermentation takes place with controlled temperature and we only devat the flower must. The malolactic fermentation takes place in new French barrels.
Ageing
Aged for 24 months in 5 new French oak barrels. After bootling, it remains in the cellar for at least 11 months. We bottled a limited edition of 2.440 bottles.
Pairing
Nice pairing with lamb, rabbit, small game meat. Also goat cheese and cheese with a slight smoke note.
